Commonly found along roadsides, the striking blue flowers of the Chicory plant attract pollinators. Native to Europe, western Asia, and North Africa, Chicory was brought to America where it became naturalized. This drought resistant plant can grow up to 5 feet tall. Its delicate flowers are commonly blue or lavender, although they can be white or pink depending on the pH of the soil. The dried root of the plant has long been used as a coffee substitute during times of economic crisis. In New Orleans, Louisiana, the famous Cafe du Monde is known for its popular coffee-chicory blend coffee.

Of Chicory, Dr Bach wrote, “Those who are very mindful of the needs of others; they tend to be over-full of care for children, relatives, friends, always finding something that should be put right. They are continually correcting what they consider wrong, and enjoy doing so. They desire that those for whom they care should be near them.” – The Twelve Healers
